2012 THOMAS CATERERS TASTING MENU

Hi friends!  Thanks for popping by our blog today!  Andy + I had the honor + pleasure of photographing the 2012 Thomas Caterers Menu Tasting Event at the Scottish Rite Cathedral in Indianapolis.  We absolutely adored this hard-working, talented staff of fun people.  Just wait until you see some of their amazing creations below!

Smoked duck with Yorkshire pudding and cherry caviar

Sunlight Ale below pulled pork BBQ pizza with egg sauce and crispy onions

Beef tenderloin with bleu cheese bacon butter + au gratin potatoes with fresh asparagus

Beet macaroon with goat cheese and avocado

Beef tenderloin with brie sauce + raspberry glaze. Served with vegetable terrine, black garlic duchesse potatoes and fried leeks

Mixed greens with goat cheese, mandarin oranges, and blueberry vinaigrette

Seared scallops with black garlic mushroom risotto

Spicy crab salad with lemon gelee and savory cheddar shortbread

Mozzarella stuffed chicken with lemon creme fraiche and honey with root vegetable souffle and green cauliflower

Braised brisket dogs (Potato pancake bun, braised brisket with pickled vegetables)

Pina colada + white wine slushy (Left);  Chocolate + red wine slushy (Right)

Tilapia with tomato caper relish + garlic lemon Yukon potatoes and haricot verts with herb butter

Pork carnita tamale cake with guacamole, salsa verde, and chipotle sour cream

And then it was on to their delectable desserts!!  Above, is a Vanilla illusion tart, chocolate brownie, and white chocolate corn horns

Deconstructed Lemon Meringue Pie (a cylinder of lemon mousse surrounded by a Halo Tuille Cookie, accented with a French Meringue Baton
with blueberry whipped cream and red raspberry marmalade) — My personal favorite of the night 🙂

And last, but certainly not least, a Peanut butter cake with raspberry powder, peanut brittle and sea salt
